Instructions

  1. Preheat the oven to 350 degrees F.
  2. Line an 8×8-inch square pan with parchment paper, leaving some paper hanging over the edges.
  3. Add softened butter, brown sugar, and vanilla extract to a large bowl.
  4. Cream together using a handheld electric mixer or stand mixer until light and fluffy (1-2 minutes).
  5. Add flour, rolled oats, baking powder, and salt.
  6. Fold together until evenly combined.
  7. Using clean hands or a silicone spatula, add 2/3 of the oatmeal crumble dough to the baking dish.
  8. Press across the bottom of the dish in an even layer. Set aside.
  9. Add chocolate chips to a large bowl.
  10. Pour sweetened condensed oat milk over the chocolate chips.
  11. Microwave for 60 seconds.
  12. Add vanilla extract, then whisk together to evenly combine.
  13. Pour the fudge into the baking dish.
  14. Spread it across the oatmeal cookie dough.
  15. Sprinkle clumps of the remaining oatmeal crumble dough on top of the fudge.
  16. Lightly press them into the fudge.
  17. Bake for approximately 25 minutes, or until the oatmeal crumble is light golden brown.
  18. Remove from the oven and let cool completely.
  19. Transfer to the refrigerator to chill for one hour.
  20. Slice into 16 bars. Enjoy!

For people with diabetes, consider using sugar substitutes like stevia or monk fruit for a healthier option.
