Decadent vegan dessert bars combining chewy oats and rich chocolate fudge, perfect for any occasion.

- 3/4 cup dairy-free butter, softened to room temperature
- 3/4 cup brown sugar
- 1 tbsp vanilla extract
- 1 and 3/4 cups all-purpose flour
- 1 and 1/2 cups rolled oats
- 1/2 tsp baking powder
- 1/4 tsp salt
- 5 oz sweetened condensed oat milk
- 1 and 1/2 cups chocolate chips
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350 degrees F.
- Line an 8×8-inch square pan with parchment paper, leaving some paper hanging over the edges.
- Add softened butter, brown sugar, and vanilla extract to a large bowl.
- Cream together using a handheld electric mixer or stand mixer until light and fluffy (1-2 minutes).
- Add flour, rolled oats, baking powder, and salt.
- Fold together until evenly combined.
- Using clean hands or a silicone spatula, add 2/3 of the oatmeal crumble dough to the baking dish.
- Press across the bottom of the dish in an even layer. Set aside.
- Add chocolate chips to a large bowl.
- Pour sweetened condensed oat milk over the chocolate chips.
- Microwave for 60 seconds.
- Add vanilla extract, then whisk together to evenly combine.
- Pour the fudge into the baking dish.
- Spread it across the oatmeal cookie dough.
- Sprinkle clumps of the remaining oatmeal crumble dough on top of the fudge.
- Lightly press them into the fudge.
- Bake for approximately 25 minutes, or until the oatmeal crumble is light golden brown.
- Remove from the oven and let cool completely.
- Transfer to the refrigerator to chill for one hour.
- Slice into 16 bars. Enjoy!
