Description

Delicate French macarons infused with the vibrant flavors of lime and tequila, perfect for any celebration.


Ingredients

Scale
  • 120 g almond flour
  • 120 g powdered sugar
  • 100 g egg whites (approx. 3 large eggs), room temperature
  • 100 g granulated sugar
  • Green gel food coloring (do NOT use liquid coloring)
  • 57 g unsalted butter, room temperature
  • 1 tsp lime zest
  • 240 g powdered sugar (for buttercream)
  • 25 g tequila
  • 2 tsp lime juice
  • Pinch of salt


Instructions

  1. Preheat the oven to 150°C (300°F) and line a baking sheet with parchment paper.
  2. Sift together the almond flour and powdered sugar into a bowl.
  3. Whip the egg whites in a clean bowl until foamy.
  4. Gradually add the granulated sugar while continuously whisking until stiff peaks form.
  5. Add a few drops of green gel food coloring and gently fold until incorporated.
  6. Fold the almond flour mixture into the egg whites gently until the batter flows like lava.
  7. Transfer the batter to a piping bag fitted with a round tip.
  8. Pipe circles onto the prepared baking sheet, leaving space between them.
  9. Tap the baking sheet against the counter to eliminate air bubbles.
  10. Let the macarons sit at room temperature for 30 minutes until a skin forms.
  11. Bake in the preheated oven for 12-15 minutes, or until the macarons easily lift off the parchment paper.
  12. Allow the macarons to cool completely on the baking sheet.
  13. Cream the unsalted butter until fluffy for the buttercream filling.
  14. Gradually add 240 g of powdered sugar and beat until well combined.
  15. Pour in the tequila and lime juice, mixing until smooth.
  16. Add a pinch of salt and beat until light and fluffy.
  17. Assemble the macarons with the buttercream filling.
