Description

A vibrant summer salad featuring roasted sweet potatoes and honey, perfect for gatherings and quick weeknight meals.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts, chopped


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with honey, olive oil, salt, and pepper in a bowl.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes or until tender.
  4. Combine mixed greens, cherry tomatoes, feta cheese, red onion, and walnuts in a large bowl.
  5. Let the sweet potatoes cool slightly once roasted, then add to the salad mix.
  6. Drizzle with additional honey or dressing if desired, toss gently, and serve.

Notes

Store leftovers in an airtight container for up to 3 days. Add dressing just before serving to keep greens crisp.
