- 1 lb lean ground turkey
- 1 small batch homemade seasoning blend (e.g., chili powder, cumin, garlic powder, onion powder, salt, pepper)
- 1 can black beans, drained and rinsed
- 1 can green chiles, chopped
- 1 cup Monterey Jack cheese, shredded
- 8 flour tortillas
- 1 avocado
- 1/2 cup sour cream or yogurt (for the dipping sauce)
- Lime juice (for the dipping sauce)
- Salt and pepper (to taste for the dipping sauce)
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the ground turkey in a skillet over medium heat until browned. Add the homemade seasoning blend and stir well.
- Stir in the black beans and green chiles, and cook for an additional 2-3 minutes.
- Warm the flour tortillas in the oven for a few minutes until soft.
- Fill each tortilla with the turkey mixture and add shredded Monterey Jack cheese.
- Place the filled tortillas in a baking dish, seam-side down, and bake in the oven for 10-15 minutes or until the tortillas are crispy and the cheese is melted.
- Blend the avocado with sour cream or yogurt, lime juice, salt, and pepper until smooth for the creamy avocado dipping sauce.
- Serve the tacos hot with the creamy dipping sauce on the side.
