Description

A delicious and healthy fusion of ground turkey and quinoa stuffed in vibrant bell peppers, perfect for families and gatherings.


Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked quinoa
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Shredded cheese (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, cook the diced onion and garlic until soft.
  4. Add the ground turkey to the skillet and cook until browned.
  5. Stir in the cooked quinoa, black beans, diced tomatoes, cumin, chili powder, salt, and pepper. Cook until heated through.
  6. Stuff the mixture into the prepared bell peppers.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes. If using cheese, remove the foil, sprinkle cheese on top of the peppers, and bake for an additional 10 minutes until the cheese is melted.
  9. Serve warm.
