Description

A flavorful celebration of Greek cuisine featuring seasoned chicken meatballs served with homemade tzatziki.


Ingredients

  • 1 cup mayonnaise
  • 1 cup cucumber (diced)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon garlic (minced)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried dill
  • 1 teaspoon fresh mint
  • 15 cherry tomatoes (halved)
  • 2 cups English cucumber (diced)
  • 1 cup kalamata olives
  • 1/2 cup red onion (diced)
  • 1/4 teaspoon kosher salt
  • 2 tablespoons homemade Greek vinaigrette (or store-bought)
  • 1 pound ground chicken
  • 1 egg
  • 1/2 cup almond flour
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon fresh mint (packed and chopped)
  • 1/3 cup Greek vinaigrette (note: reserve for after meatballs are cooked)
  • Crumbled feta cheese
  • Cooked rice of your choice
  • Lemon orzo pasta
  • Pita bread
  • Quick pickled onions


Instructions

  1. Prepare the Dairy Free Tzatziki Sauce.
  2. Make the Greek Salad.
  3. Combine ground chicken, egg, almond flour, 1 teaspoon kosher salt, oregano, basil, the first 1 teaspoon of dill, onion powder, garlic powder, and the first 1/2 teaspoon of black pepper in a large bowl.
  4. Add 1 tablespoon fresh mint (packed and chopped) to the mixture.
  5. Shape the mixture into meatballs, about 1 inch in diameter.
  6. Preheat your oven to 400°F (200°C).
  7. Arrange the meatballs on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes, until cooked through.
  9. While the meatballs are baking, combine the diced English cucumber, halved cherry tomatoes, diced red onion, kalamata olives, and 1/4 teaspoon kosher salt in a large bowl.
  10. Drizzle with homemade Greek vinaigrette and toss gently.
  11. Prepare the reserved 1/3 cup of Greek vinaigrette for drizzling after cooking the meatballs.
  12. Serve the Greek Chicken Meatballs with the Tzatziki, Greek salad, crumbled feta, and your choice of rice, lemon orzo pasta, or pita bread.
  13. Garnish each serving with pickled onions for an extra zing.

Notes

Use fresh herbs for enhanced flavor. Don’t overcrowd the baking sheet for even cooking.
