Delicious marinated flank steak skewers grilled to perfection, served with vibrant chimichurri sauce.

- 1 lb flank steak
- 1 cup fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt and pepper to taste

Instructions
- Cut the flank steak into cubes and set aside.
- Combine the cilantro, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper in a blender or food processor to create the chimichurri sauce. Blend until smooth.
- Marinate the steak cubes in half of the chimichurri sauce for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated steak onto skewers.
- Grill the skewers for about 3-4 minutes on each side, or until desired doneness is reached.
- Remove from the grill and let rest for a few minutes.
- Serve with the remaining chimichurri sauce drizzled on top.
