Description

Delicious zucchini fritters with a nutty crunch from toasted sesame seeds, perfect for summer gatherings.


Ingredients

  • 2 cups grated zucchini (excess moisture squeezed out)
  • 1/4 cup toasted sesame seeds (coarsely chopped)
  • 1 cup all-purpose flour
  • 1 large egg (beaten)
  • 2 tablespoons olive oil (for frying)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Grate the zucchini using a box grater, then transfer it to a clean kitchen towel and squeeze out excess moisture. Set aside.
  2. Combine the grated zucchini, toasted sesame seeds, flour, beaten egg, salt, and black pepper in a large mixing bowl. Stir until a thick batter forms.
  3. Heat a tablespoon of olive oil in a frying pan over medium heat.
  4. Scoop about 2-3 tablespoons of batter, form into a patty, and place in the hot oil.
  5. Fry for about 3-4 minutes on each side until golden brown.
  6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  7. Repeat with remaining batter and serve warm with dipping sauce.

Notes

Store cooked fritters in an airtight container for up to 3 days. Freeze un-fried patties separated by parchment paper for up to 2 months.
