Description

Delightfully moist and flavorful zucchini bars that are perfect for summer gatherings and family celebrations.


Ingredients

  • 2 cups of grated zucchini
  • 1 cup of granulated sugar
  • 1 cup of brown sugar
  • 1 cup of vegetable oil
  • 3 large eggs
  • 2 teaspoons of vanilla extract
  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of salt
  • 1 cup of chopped nuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan and line it with parchment paper for easy removal.
  3. Grate the zucchini using a box grater, then squeeze out excess moisture.
  4. Whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large bowl until smooth.
  5. Combine the flour, baking powder, baking soda, cinnamon, and salt in a separate bowl.
  6. Gradually add the dry mixture to the wet ingredients, stirring just until combined.
  7. Fold in the grated zucchini and nuts, if you’re using them.
  8. Pour the batter into the prepared baking pan and spread it evenly.
  9. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

The bars will continue to firm up as they cool, so do not be alarmed if they seem a bit soft initially.
