Delightfully moist and flavorful zucchini bars that are perfect for summer gatherings and family celebrations.
Ingredients

- 2 cups of grated zucchini
- 1 cup of granulated sugar
- 1 cup of brown sugar
- 1 cup of vegetable oil
- 3 large eggs
- 2 teaspoons of vanilla extract
- 2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 1 teaspoon of ground cinnamon
- ½ teaspoon of salt
- 1 cup of chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking pan and line it with parchment paper for easy removal.
- Grate the zucchini using a box grater, then squeeze out excess moisture.
- Whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large bowl until smooth.
- Combine the flour, baking powder, baking soda, cinnamon, and salt in a separate bowl.
- Gradually add the dry mixture to the wet ingredients, stirring just until combined.
- Fold in the grated zucchini and nuts, if you’re using them.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
The bars will continue to firm up as they cool, so do not be alarmed if they seem a bit soft initially.
