- 1 French or sourdough baguette (sliced ½ inch thick)
- 3 tablespoons olive oil (for brushing)
- 1 pinch kosher salt (for seasoning)
- 1 pinch black pepper (for seasoning)
- 1.5 cups whole milk ricotta cheese (fresh is best)
- 3 teaspoons extra-virgin olive oil
- 0.5 teaspoon fresh thyme (finely chopped)
- 0.25 teaspoon kosher salt
- 0.25 teaspoon black pepper (freshly cracked)
- 3 tablespoons toasted pistachios (roughly chopped)
- 2 tablespoons honey (for drizzling)
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet.
- Brush the tops of the baguette slices with olive oil.
- Sprinkle a pinch of kosher salt and black pepper over the slices.
- Bake in the oven for 5-7 minutes, or until golden brown.
- Remove the baguette slices from the oven and let them cool slightly.
- In a mixing bowl, whisk together the ricotta cheese, extra-virgin olive oil, fresh thyme, kosher salt, and cracked black pepper until creamy and smooth.
- Spread the whipped ricotta mixture generously over each toasted baguette slice.
- Top with the toasted pistachios for added crunch.
- Drizzle honey over each crostini just before serving.
