Description

A hearty and comforting casserole that combines all the beloved elements of a classic walking taco into a warm, cheesy embrace.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes (with green chilies)
  • 1 cup corn (frozen or canned)
  • 1 cup diced bell peppers
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 cups Fritos
  • 1/2 cup sour cream (for serving)
  • 1/2 cup sliced green onions (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef over medium heat until cooked through, then drain any excess fat.
  3. Stir in the taco seasoning, diced tomatoes, corn, and bell peppers. Cook for about 5 minutes until heated through.
  4. Layer half of the Fritos in a greased casserole dish, followed by half of the beef mixture, and half of the cheese. Repeat the layers with the remaining ingredients.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  6. Serve warm, topped with sour cream and green onions.

Notes

Allow casserole to rest for a few minutes after baking to set and make serving easier.
