- 1 baguette
- Olive oil, for brushing (about 2-3 tablespoons)
- Sea salt and freshly ground black pepper
- 1 garlic clove, cut in half
- 10-12 grape tomatoes
- Boursin or soft herbed goat cheese
- Chives
- Optional: microgreens, small basil leaves
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the baguette on a slight diagonal into ½-¾ inch (1.5 cm) thick slices and arrange them in a single layer on a large baking sheet.
- Brush the tops with olive oil and sprinkle with salt and pepper.
- Bake until golden and crisp, about 8-10 minutes.
- Rub the cut side of the garlic clove over each slice while warm, then let cool.
- Slice the grape tomatoes in half lengthwise and cut tulip shapes into the top edge of each half.
- Spread a layer of cheese on each crostini.
- Place a tomato tulip head near the top of each crostini.
- Cut chives into small lengths for the stems and place under the tomato tulip.
- Add smaller pieces of chives or microgreens/basil leaves for accents.
- Arrange the finished crostini on a platter and serve immediately.
Notes
Best enjoyed fresh for optimal crunch. Store leftovers in an airtight container for up to 2 days.
