- 1/4 cup vegan mayo

Instructions
- Preheat the oven to 400°F (200°C).
- Slice the tomatoes and place them on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Roast for about 20 minutes until tender.
- Mix vegan mayo, lemon juice, and minced garlic in a bowl to create the aioli.
- Toast the bread slices until golden.
- Assemble the sandwiches by spreading the aioli on the bread, then layer on the roasted tomatoes, avocado slices, and arugula.
- Top with another piece of bread and serve immediately.
Notes
For an extra crispy texture, consider grilling the bread lightly with a bit of olive oil.
