Ingredients

  • 4 ripe tomatoes
  • 1/4 cup vegan mayo
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 avocado, sliced
  • 1 cup arugula
  • 4 slices bread (your choice)
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the tomatoes and place them on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Roast for about 20 minutes until tender.
  3. Mix vegan mayo, lemon juice, and minced garlic in a bowl to create the aioli.
  4. Toast the bread slices until golden.
  5. Assemble the sandwiches by spreading the aioli on the bread, then layer on the roasted tomatoes, avocado slices, and arugula.
  6. Top with another piece of bread and serve immediately.
