Description

A comforting and delightful blend of ripe tomatoes and fresh basil, perfect for cozy evenings and family gatherings.


Ingredients

  • Fresh tomatoes
  • Basil leaves
  • Onion
  • Garlic
  • Olive oil
  • Vegetable broth
  • Cream or coconut milk
  • Salt
  • Pepper


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the fresh tomatoes in half and place them on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
  3. Roast in the oven for about 30 minutes until the tomatoes are caramelized.
  4. Heat olive oil over medium heat in a large pot. Add diced onion and minced garlic, cooking until soft.
  5. Add the roasted tomatoes and vegetable broth to the pot.
  6. Bring to a simmer and cook for 15 minutes.
  7. Blend the soup until smooth using an immersion blender or regular blender.
  8. Stir in the cream or coconut milk and fresh basil leaves.
  9. Adjust seasoning with salt and pepper.
  10. Serve warm and enjoy!

Notes

For a vegan version, use coconut milk and ensure the vegetable broth is vegan. Store leftovers for up to 5 days in the fridge or freeze for up to 3 months.
