- 1 ½ cups cake flour
- 1 ½ tsp baking powder
- A pinch of salt
- ½ cup unsalted butter (softened to room temperature, cut into 1-inch cubes)
- ½ cup sugar
- ½ tsp vanilla extract
- 2 large eggs (at room temperature)
- ½ cup whole milk (at room temperature)
- 3 Tbsp instant espresso powder
- 3 Tbsp boiling water
- 4 ½ cups full-fat mascarpone cheese (cold)
- 2 ½ cups powdered sugar (sifted)
- ½ cup espresso or strong coffee (chilled)
- 1 ½ cups heavy whipping cream (cold)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line the bottoms of two 9-inch round cake pans with parchment paper.
- Whisk together the cake flour, baking powder, and salt in a bowl; set aside.
- Cream the softened butter and sugar in a large bowl until light and fluffy. Add the vanilla extract and combine.
- Beat in the eggs one at a time, mixing well after each addition. Pour in the whole milk and mix until smooth.
- Fold in the flour mixture gradually until just combined.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before turning them onto a wire rack to cool completely.
- Combine the instant espresso powder with boiling water in a small bowl; let it cool.
- Beat the heavy whipping cream in a large bowl until soft peaks form. In another bowl, beat the mascarpone cheese and powdered sugar until smooth.
- Fold the whipped cream gently into the mascarpone mixture until fully combined.
- Soak each cooled cake layer with the chilled espresso or strong coffee.
- Spread a layer of mascarpone frosting on top of the first cake layer. Place the second layer on top and frost the top and sides of the cake with the remaining mascarpone frosting.
- Chill the assembled cake for at least 2 hours before serving to let the flavors meld.
Notes
