Description

Delightful cookies with rich layers of chocolate and creamy peanut butter, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup creamy peanut butter
  • 1 1/2 cups powdered sugar
  • 1 cup milk chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar in a large bowl until smooth.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. Whisk together the flour, cocoa powder, baking soda, and salt in another bowl.
  5. Gradually mix the dry ingredients into the butter mixture until just combined.
  6. Scoop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 8-10 minutes, until the edges are set. Allow to cool completely.
  8. Beat together the peanut butter and powdered sugar until smooth in a separate bowl.
  9. Spread a layer of the peanut butter mixture on top of each cookie.
  10. Melt the chocolate chips in a microwave or using a double boiler.
  11. Drizzle or dip the cookies into the melted chocolate, covering the peanut butter layer.
  12. Allow the chocolate to set before serving.

Notes

Store cookies in an airtight container for up to a week. For longer storage, freeze them between layers of parchment paper for up to three months.
