- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup creamy peanut butter
- 1 1/2 cups powdered sugar
- 1 cup milk chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together the butter, granulated sugar, and brown sugar in a large bowl until smooth.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- Whisk together the flour, cocoa powder, baking soda, and salt in another bowl.
- Gradually mix the dry ingredients into the butter mixture until just combined.
- Scoop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 8-10 minutes, until the edges are set. Allow to cool completely.
- Beat together the peanut butter and powdered sugar until smooth in a separate bowl.
- Spread a layer of the peanut butter mixture on top of each cookie.
- Melt the chocolate chips in a microwave or using a double boiler.
- Drizzle or dip the cookies into the melted chocolate, covering the peanut butter layer.
- Allow the chocolate to set before serving.
Notes
Store cookies in an airtight container for up to a week. For longer storage, freeze them between layers of parchment paper for up to three months.
