- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) diced tomatoes
- 1 cup beef broth
- 1 cup cheddar cheese, shredded
- 1 cup sour cream
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Brown the ground beef over medium heat in a large pot; drain excess fat.
- Add taco seasoning, diced tomatoes, and beef broth to the pot.
- Stir in the pasta shells and bring to a boil.
- Reduce heat, cover, and let simmer for about 10-12 minutes, or until pasta is cooked.
- Stir in the cheddar cheese and sour cream until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
For a leaner option, use ground turkey or chicken. This dish can also be made vegetarian by substituting ground beef with black beans or lentils.
