- 1 pound lean ground beef (or ground turkey, chicken)
- 1 tablespoon taco seasoning
- 1/4 cup shredded carrot (optional)
- 1/4 cup chopped bell pepper or baby spinach (optional)
- 2 pie crusts (defrosted but unbaked)
- 1/3 cup shredded Mexican cheese
- 1 egg (for brushing)
- Salsa (for dipping)
Instructions
- Set a medium skillet over medium-high heat.
- Add the ground beef and break it apart into crumbles.
- Sprinkle taco seasoning and shredded carrot or pepper into the skillet.
- Cook for 5-6 minutes until the meat is browned.
- Remove from the heat and set aside.
- Preheat the oven to 425°F.
- Line two baking sheets with parchment paper.
- Roll out the pie crusts on a floured surface.
- Cut out ghost shapes using cookie cutters.
- Arrange half of the cut shapes on the baking sheets.
- Spoon the taco filling into the middle of each ghost and sprinkle cheese on top.
- Use a small round object to cut out eyes and mouth on the remaining ghost shapes.
- Place cut shapes over filled ghosts.
- Seal the edges using the tines of a fork.
- Mix the egg with water to make an egg wash.
- Brush the egg wash on top of each pie.
- Bake for 10-14 minutes until golden brown.
- Remove from the oven, let cool, and serve with salsa or guacamole.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze unbaked for up to 2 months.
