- 2 cups cooked chicken, diced
- 1 cup sun-dried tomatoes, chopped
- 1 cup celery, diced
- 1 bell pepper, diced
- 1/2 cup red onion, diced
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tablespoons lemon juice
- 1 tablespoon fresh basil, chopped
- Salt and pepper to taste
Instructions
- Combine in a large bowl the diced chicken, sun-dried tomatoes, celery, bell pepper, and red onion.
- Mix together in a separate bowl the mayonnaise, Greek yogurt, lemon juice, basil, salt, and pepper.
- Pour the dressing over the chicken mixture and toss until everything is well coated.
- Serve as a sandwich, stuffed in pita bread, or with crackers.
