A delightful dessert combining tart rhubarb and sweet strawberries topped with a crunchy oat mixture.

- 2 cups rhubarb, chopped
- 2 cups strawberries, hulled and sliced
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup brown sugar
- 1/2 cup flour
- 1/2 cup butter, melted
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the chopped rhubarb, sliced strawberries, sugar, cornstarch, and vanilla extract in a bowl.
- Spread the fruit mixture in the bottom of a baking dish.
- Combine the oats, brown sugar, flour, melted butter, and cinnamon in another bowl until crumbly.
- Sprinkle the oatmeal mixture over the fruit evenly.
- Bake in the preheated oven for 30-40 minutes, until the topping is golden brown and the fruit is bubbly.
- Allow to cool slightly before serving.
Notes
Use fresh, in-season strawberries and rhubarb for the best flavor. Can be served warm or at room temperature.
