Description

A delightful dessert combining tart rhubarb and sweet strawberries topped with a crunchy oat mixture.


Ingredients

  • 2 cups rhubarb, chopped
  • 2 cups strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1/2 cup flour
  • 1/2 cup butter, melted
  • 1/2 teaspoon cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the chopped rhubarb, sliced strawberries, sugar, cornstarch, and vanilla extract in a bowl.
  3. Spread the fruit mixture in the bottom of a baking dish.
  4. Combine the oats, brown sugar, flour, melted butter, and cinnamon in another bowl until crumbly.
  5. Sprinkle the oatmeal mixture over the fruit evenly.
  6. Bake in the preheated oven for 30-40 minutes, until the topping is golden brown and the fruit is bubbly.
  7. Allow to cool slightly before serving.

Notes

Use fresh, in-season strawberries and rhubarb for the best flavor. Can be served warm or at room temperature.
