A refreshing and vibrant salad featuring chicken, juicy strawberries, and crunchy pecans, dressed in a tangy poppy seed dressing.
Ingredients

- 2 c shredded chicken
- 2 celery stalks, chopped into 1/4 in. pieces
- 1 green onion, chopped thin
- 5-6 large strawberries, diced
- 1/3 c chopped pecans
- 1/4 c mayonnaise
- 2 T Greek yogurt, plain
- 1 tsp dijon mustard
- 1 tsp lemon juice
- 1 T poppy seeds
- 1/2 tsp pepper
- Salt to taste
Instructions
- Cut and chop ingredients accordingly.
- Add all the ingredients except the strawberries into a mixing bowl.
- Stir to combine and evenly coat the mixture.
- Adjust the consistency by adding more mayo or yogurt, if desired.
- Fold in strawberries; alternatively, you can wait until just before serving to add them if preparing ahead.
- Serve immediately or chill for about 10-20 minutes before serving.
Notes
For best flavor, use fresh ingredients. Chill the salad before serving to allow flavors to meld.
