Ingredients

  • 1 cup fresh strawberries, pureed
  • 1 teaspoon white vinegar


Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
  3. In another bowl, mix the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and strawberry puree until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Stir in the vinegar gently.
  6. Fill each cupcake liner about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
