- 2 cups fresh strawberries, hulled and sliced
- 1 cup unsweetened shredded coconut
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Combine sliced strawberries with 1 tablespoon of maple syrup in a mixing bowl and set aside.
- Mix the shredded coconut, rolled oats, almond flour, melted coconut oil, remaining maple syrup, vanilla extract, and salt until well combined in another bowl.
- Layer the strawberries in a baking dish, then spread the coconut mixture evenly on top.
- Bake for 25-30 minutes, or until the topping is golden brown.
- Let cool slightly before serving. Enjoy warm or chilled!
