Description

Delicious and festive cupcakes perfect for St. Patrick’s Day, topped with a creamy shamrock frosting.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1 cup powdered sugar
  • Green food coloring
  • Sprinkles for decoration


Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool completely before frosting.
  10. In a separate bowl, beat the cream cheese until smooth, then gradually add the powdered sugar and mix until well combined.
  11. Add green food coloring to the frosting until the desired color is achieved.
  12. Frost the cooled cupcakes and decorate with sprinkles.

  • For a richer flavor, use cream cheese frosting instead of regular frosting.
  • Adjust the amount of green food coloring based on your preference for color intensity.
  • These cupcakes can be made a day in advance and stored in an airtight container.
