Ingredients

  • 1 cup cherry tomatoes, halved

  • 1 cup tomato sauce

  • 2 cloves garlic, minced

  • Parmesan cheese, for serving (optional)


Instructions

  1. Cook the tortellini according to the package instructions. Drain and set aside.
  2. Heat olive oil over medium heat in the same pot. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cherry tomatoes and cook until they begin to soften, about 3-4 minutes.
  4. Stir in the heavy cream and tomato sauce, bringing the mixture to a simmer.
  5. Add the fresh spinach and cooked tortellini, stirring to coat everything in the sauce.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with Parmesan cheese if desired.
