A vibrant salad combining whole wheat pasta, fresh spinach, crumbled feta, and sweet cranberries, perfect for summer gatherings and meal prep.


Ingredients

  • 8 oz whole wheat pasta (rotini or bowtie)
  • 6 cups fresh baby spinach
  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds
  • 1/4 cup red onion, finely diced
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse with cold water.
  2. Whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
  3. Combine the cooled pasta, spinach, feta cheese, cranberries, almonds, and red onion.
  4. Pour the dressing over the salad and toss gently.
  5. Refrigerate for at least 30 minutes before serving.
  6. Toss again before serving and adjust seasoning if needed.
