Ingredients

- 120 g spelt flour
- 1 tsp baking powder
- ½ tsp fine salt
- ¼ tsp black pepper
- 2 large eggs
- 120 ml milk
- 1 tbsp olive oil
- 250 g sweetcorn kernels
- 2 spring onions, chopped
- ½ tsp smoked paprika (optional)
- 2 tbsp fresh coriander, chopped
- 2-3 tbsp neutral oil for frying
Instructions
- Combine spelt flour, baking powder, salt, and pepper in a bowl.
- Stir in the eggs, milk, and olive oil to form a smooth batter.
- Add sweetcorn, spring onions, paprika, and coriander. Stir until mixed.
- Warm oil in a non-stick frying pan over medium heat.
- Spoon small rounds of batter into the pan.
- Fry for 2–3 minutes per side until golden.
- Place fritters on kitchen paper and add a light pinch of salt if needed.

For a healthier option, consider using fresh corn and adjusting the spice levels to your taste.
