Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the vanilla and almond extracts, mixing well.
  4. Gradually add the flour and salt, mixing until a dough forms.
  5. Chill the dough for about 30 minutes.
  6. Roll out the dough on a floured surface to about 1/8 inch thick.
  7. Cut out shapes using cookie cutters, making sure to cut out the center of half of the cookies.
  8. Place the cookies on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until lightly golden.
  10. Once cooled, spread raspberry jam on the solid cookies and top with the cut-out cookies.
  11. Dust with powdered sugar before serving.

Notes

  • For a different flavor, try using apricot or strawberry jam.
  • Make sure the butter is softened for easier mixing.
