Ingredients

- 1 cup rolled oats
- 1/2 cup nut butter (like peanut butter or almond butter)
- 1/4 cup honey or maple syrup
- 1/4 cup chocolate chips
- 1/4 cup graham cracker crumbs
- 1/4 cup mini marshmallows
- 1/2 teaspoon vanilla extract
Instructions
- Combine in a large mixing bowl the rolled oats, nut butter, honey (or maple syrup), and vanilla extract.
- Stir in the chocolate chips, graham cracker crumbs, and mini marshmallows until well combined.
- Scoop out small portions of the mixture and roll them into bite-sized balls.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for about 30 minutes to set, then enjoy!
Notes
Store in an airtight container for up to a week or freeze for up to three months. Chill the mixture before rolling if too sticky.
