- 2 cups broccoli florets
- 1 cup carrots, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup smoked gouda cheese, shredded
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until translucent.
- Add diced carrots and broccoli florets, and cook for another 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until vegetables are tender.
- Stir in the heavy cream and smoked gouda cheese, and cook until cheese is melted and soup is creamy.
- Season with salt and pepper to taste. Serve hot.
Notes
Use fresh ingredients for vibrant flavor. Don’t rush the cooking, especially sautéing the onion and garlic.
