Description

Delicious crispy smashed potatoes that are crunchy on the outside and fluffy on the inside, infused with fresh herbs for flavor.


Ingredients

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 4 tablespoons butter
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Boil the baby potatoes in salted water until fork-tender, about 20 minutes.
  3. Drain and let cool slightly.
  4. Place the potatoes on a baking sheet and gently smash each one with a fork or the bottom of a glass.
  5. Drizzle olive oil and melted butter over the smashed potatoes.
