Description

A refreshing and spicy Smashed Cucumber Salad with Chili Crisp that combines crisp cucumbers, garlic, and vibrant seasonings.

Ingredients

Scale
  • 2 Cucumbers
  • 2 tablespoons Chili crisp
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy sauce
  • 1 tablespoon Vinegar
  • 1 tablespoon Sesame oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. Smash the cucumbers with the flat side of a knife or rolling pin until they crack but remain intact. Cut the smashed cucumbers into bite-sized pieces and place them in a bowl.
  2. Combine minced garlic, chili crisp, soy sauce, vinegar, sesame oil, salt, and pepper in a separate bowl to create the dressing.
  3. Pour the dressing over the cucumbers and toss to combine.
  4. Let the salad sit for at least 10 minutes to allow the cucumbers to absorb the flavors. Serve chilled.

Notes

For people watching their sugar intake, consider using stevia, monk fruit, or allulose in dressing variations.
