Description

A comforting dish featuring tender beef roast simmered in rich gravy, served over bread and paired with mashed potatoes.


Ingredients

  • 1 medium Onion (sliced yellow or sweet onion)
  • 4 cups Beef Broth (low-sodium for healthier option)
  • 2 tablespoons Worcestershire Sauce
  • 2 tablespoons Soy Sauce (gluten-free if necessary)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Thyme (or Italian seasoning)
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt (lower sodium alternative if necessary)
  • 2 tablespoons Cornstarch
  • 1/4 cup Cold Water
  • 6 slices Bread (White or Texas toast)
  • 4 cups Mashed Potatoes (store-bought or homemade)


Instructions

  1. Place the beef roast in the slow cooker.
  2. Add the sliced onion on top of the roast.
  3. Pour in the beef broth.
  4. Drizzle Worcestershire sauce and soy sauce over the mixture.
  5. Sprinkle garlic powder, onion powder, thyme, black pepper, and salt on top.
  6. Cover the slow cooker with the lid.
  7. Set to cook on low for 480 minutes or high for 240 minutes, until the beef is tender.
  8. Remove the cooked beef and shred it using two forks.
  9. Mix cornstarch with cold water to create a slurry.
  10. Stir the slurry into the cooking liquid in the slow cooker.
  11. Cover and cook on high for an additional 30 minutes to thicken the gravy.
  12. Lay sliced bread on plates.
  13. Spoon the shredded beef and gravy over the bread.
  14. Serve with mashed potatoes on the side.

Notes

For an extra flavor boost, sear the beef roast before slow cooking it. Adjust seasoning to taste.
