Description

Ingredients

  • 2 pounds skirt steak
  • 1/4 cup olive oil
  • Zest and juice of 2 oranges
  • Zest and juice of 1 lemon
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste


Instructions

  1. Combine olive oil, orange zest, orange juice, lemon zest, lemon juice, garlic, rosemary, thyme, salt, and pepper in a bowl.
  2. Whisk until well blended to create a flavorful marinade.
  3. Place the skirt steak in a resealable plastic bag or a shallow dish.
  4. Pour the marinade over the skirt steak, ensuring that it’s well-coated.
  5. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or overnight for more intense flavor.
  6. Preheat your grill or grill pan to medium-high heat.
  7. Remove the steak from the marinade and discard any leftover marinade.
  8. Sear the skirt steak on the grill, cooking for about 3-4 minutes per side for medium-rare, or longer to your desired doneness.
  9. Let the steak rest for about 5 minutes after grilling before slicing it against the grain for maximum tenderness.
