Description

A flavorful dish of poached eggs in a spicy tomato sauce, perfect for any meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 can (28 ounces) crushed tomatoes
  • Salt and pepper, to taste
  • 4-6 eggs
  • Fresh parsley, for garnish
  • Crusty bread, for serving


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and bell pepper, cooking until softened.
  3. Stir in garlic, paprika, and cumin, cooking for another minute.
  4. Pour in crushed tomatoes and season with salt and pepper.
  5. Simmer for about 10 minutes.
  6. Create wells in the sauce and crack an egg into each well.
  7. Cover and cook until eggs are set to your liking.
  8. Garnish with parsley and serve with crusty bread.
