Description

Decadent mini tarts filled with luscious chocolate ganache and a hint of sea salt.


Ingredients

Scale
  • 1 cup Unsalted butter, softened at room temperature
  • 1/2 cup Granulated sugar (can substitute with light brown sugar)
  • 1 large Egg yolk, room temperature
  • 1 teaspoon Vanilla extract (pure extract preferred)
  • 2 cups All-purpose flour
  • 8 ounces Semisweet chocolate (60-70% cacao bars)
  • 1 cup Heavy cream (heat until steaming)
  • 1 teaspoon Sea salt flakes (Maldon or fleur de sel)


Instructions

  1. Cream the butter and sugar until light and fluffy, about 2 minutes.
  2. Blend in egg yolk and vanilla, mixing just until combined.
  3. Fold in flour gradually until a soft dough forms.
  4. Shape the tart shells into greased tartlet pans and chill for 10 minutes.
  5. Blind bake the shells for 12 minutes, then remove weights and bake for another 3-5 minutes until golden.
  6. Heat the heavy cream until steaming and pour over chopped chocolate; mix until glossy.
  7. Fill the cooled shells with ganache and sprinkle with sea salt flakes.
  8. Let set for 20 minutes before serving.

Notes

For people with diabetes, consider using sugar substitutes like stevia or monk fruit.
