Decadent mini tarts filled with luscious chocolate ganache and a hint of sea salt.
Ingredients

- 1 cup Unsalted butter, softened at room temperature
- 1/2 cup Granulated sugar (can substitute with light brown sugar)
- 1 large Egg yolk, room temperature
- 1 teaspoon Vanilla extract (pure extract preferred)
- 2 cups All-purpose flour
- 8 ounces Semisweet chocolate (60-70% cacao bars)
- 1 cup Heavy cream (heat until steaming)
- 1 teaspoon Sea salt flakes (Maldon or fleur de sel)
Instructions
- Cream the butter and sugar until light and fluffy, about 2 minutes.
- Blend in egg yolk and vanilla, mixing just until combined.
- Fold in flour gradually until a soft dough forms.
- Shape the tart shells into greased tartlet pans and chill for 10 minutes.
- Blind bake the shells for 12 minutes, then remove weights and bake for another 3-5 minutes until golden.
- Heat the heavy cream until steaming and pour over chopped chocolate; mix until glossy.
- Fill the cooled shells with ganache and sprinkle with sea salt flakes.
- Let set for 20 minutes before serving.
Notes
For people with diabetes, consider using sugar substitutes like stevia or monk fruit.
