- 1 pound fingerling potatoes
- 2 tablespoons olive oil
- 1/4 cup white vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the fingerling potatoes, then cut them in half lengthwise.
- Combine in a large bowl the olive oil, vinegar, salt, pepper, garlic powder, and onion powder.
- Add the potatoes to the bowl and toss until they are well coated.
- Place the potatoes cut-side down on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes or until tender and slightly golden.
- Serve warm as a snack or side dish.
Notes
Select fresh potatoes with firm skins for best results. Adjust vinegar for personal taste preference.
