Description

A delightful twist on traditional roasted potatoes, featuring the tangy flavor of vinegar and the natural sweetness of fingerling potatoes.


Ingredients

  • 1 pound fingerling potatoes
  • 2 tablespoons olive oil
  • 1/4 cup white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the fingerling potatoes, then cut them in half lengthwise.
  3. Combine in a large bowl the olive oil, vinegar, salt, pepper, garlic powder, and onion powder.
  4. Add the potatoes to the bowl and toss until they are well coated.
  5. Place the potatoes cut-side down on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 25-30 minutes or until tender and slightly golden.
  7. Serve warm as a snack or side dish.

Notes

Select fresh potatoes with firm skins for best results. Adjust vinegar for personal taste preference.
