Description

A cozy and heartwarming dish that combines succulent chicken thighs with the sweetness of Honeycrisp apples, fragrant rosemary, and rich apple cider, perfect for autumn meals.


Ingredients

  • 4-5 Bone-In Chicken Thighs
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Fresh Thyme
  • 2 tbsp Fresh Rosemary, chopped
  • Salt and Pepper to taste
  • 1 Red Onion, sliced
  • 1-2 Honeycrisp Apples, sliced
  • 2-3 Rosemary Sprigs
  • Olive oil for searing
  • 4 tbsp Salted Butter
  • 3/4 cup Apple Cider
  • 1/2 cup Chicken Broth or White Wine
  • 2 tbsp Dijon Mustard
  • 3 cloves Garlic, diced finely


Instructions

  1. Preheat the oven to 425°F.
  2. Season the chicken thighs in a large bowl with onion powder, garlic powder, smoked paprika, fresh thyme, chopped rosemary, salt, and pepper. Massage the spices into the chicken to ensure even distribution.
  3. Heat olive oil in a large, oven-safe skillet over medium heat.
  4. Add the chicken thighs, skin-side down, to the hot skillet. Sear for about 3-4 minutes on each side until golden brown. Remove the skillet from heat.
  5. Scatter sliced red onions and apples around the chicken. Garnish with rosemary sprigs for added flavor.
  6. Transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
  7. Remove the chicken and apples from the skillet once cooked. Place the skillet back on the stove over medium-low heat.
  8. Add butter, apple cider, chicken broth (or wine), Dijon mustard, and diced garlic to the skillet. Whisk the sauce until it begins to thicken.
  9. Add the chicken and apples back to the pan. Spoon the sauce over them to coat.
  10. Serve immediately and enjoy!

Notes

Refrigerate leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
