- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- 1 cup vegetable broth
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the leg of lamb dry with paper towels to ensure a nice crust.
- Season generously with salt and pepper on all sides.
- Mix minced garlic, olive oil, rosemary, and thyme in a small bowl to create a flavorful paste.
- Rub the herb and garlic mixture all over the lamb, massaging it into the meat for maximum flavor.
- Place the lamb in a roasting pan, fat side up.
- Add vegetable broth to the bottom of the pan to keep the meat moist and enhance flavor.
- Roast in the preheated oven for about 1.5 to 2 hours, or until a meat thermometer inserted into the thickest part reads 135°F (57°C) for medium-rare.
- Baste the lamb halfway through the cooking process for added moisture.
- Remove the leg of lamb from the oven and tent it with foil; let it rest for 15-20 minutes before slicing.
- Slice against the grain into thick pieces to serve.

Invest in a good meat thermometer and let the lamb rest after roasting to retain its juices.
