- 8 slices of baguette or ciabatta
- 2 cups cherry tomatoes
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Spread cherry tomatoes on a baking sheet, drizzle with olive oil, salt, and pepper. Roast for about 15-20 minutes until they are soft and slightly caramelized.
- Combine the ricotta cheese with a drizzle of olive oil, salt, and pepper in a bowl. Whip until creamy and smooth.
- Toast the slices of bread until golden brown.
- Spread the whipped ricotta on each slice of toasted bread.
- Top with roasted tomatoes and garnish with fresh basil and a drizzle of balsamic vinegar if desired.
- Serve immediately and enjoy!
Notes
For better flavor, use high-quality ricotta and ripe tomatoes. Assemble crostini just before serving to keep the bread crunchy.
