Description

A delightful crostini topped with creamy whipped ricotta and warm, luscious roasted tomatoes, perfect as an appetizer or a light meal.


Ingredients

  • 1 cup fresh ricotta cheese
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh basil (optional)
  • 8 slices of baguette or ciabatta
  • 2 cups cherry tomatoes
  • 1 tablespoon balsamic vinegar (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread cherry tomatoes on a baking sheet, drizzle with olive oil, salt, and pepper. Roast for about 15-20 minutes until they are soft and slightly caramelized.
  3. Combine the ricotta cheese with a drizzle of olive oil, salt, and pepper in a bowl. Whip until creamy and smooth.
  4. Toast the slices of bread until golden brown.
  5. Spread the whipped ricotta on each slice of toasted bread.
  6. Top with roasted tomatoes and garnish with fresh basil and a drizzle of balsamic vinegar if desired.
