- 1 package puff pastry (thawed)
- 1 cup rhubarb (chopped)
- 1/2 cup cream cheese (softened)
- 1/4 cup sugar
- 1 egg (beaten, for egg wash)
- 1 teaspoon vanilla extract
- Powdered sugar (for dusting)
Instructions
- Preheat the oven to 400°F (200°C).
- Mix the softened cream cheese, sugar, and vanilla extract in a bowl until smooth.
- Roll out the puff pastry and cut it into rectangles.
- Place a spoonful of the cream cheese mixture and some chopped rhubarb in the center of each rectangle.
- Fold or twist the pastry to enclose the filling, sealing the edges.
- Brush the tops with the beaten egg.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Remove from the oven and let cool slightly before dusting with powdered sugar.
