An indulgent chocolate cake layered with creamy peanut butter buttercream and topped with a luscious chocolate ganache.

- 1 ¾ cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened
- 1 cup creamy peanut butter
- 4 cups powdered sugar
- ¼ cup heavy cream (more if needed)
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Add eggs, milk, oil, and vanilla to the dry ingredients and mix until combined. Stir in boiling water until the batter is smooth.
- Divide the batter evenly between the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in pans for 10 minutes, then remove from pans and let cool completely on wire racks.
- Beat together softened butter and peanut butter until smooth. Gradually add powdered sugar and heavy cream until you reach your desired consistency for the peanut butter buttercream.
- Place one chocolate cake layer on a serving plate, spread peanut butter buttercream over the top, and place the second layer on top.
- Heat heavy cream until just boiling, then pour over chocolate chips. Let sit for 5 minutes, then stir until smooth for the chocolate ganache.
- Pour chocolate ganache over the top of the cake, allowing it to drip down the sides.
- Decorate with additional peanut butter buttercream, if desired, and serve.
Notes
For a lighter texture, sift the dry ingredients. Use high-quality chocolate for the ganache.
