- 1 cup (2 sticks) unsalted butter, softened
- 1 ¾ cups granulated sugar
- 4 large eggs + 2 egg whites
- 2 tsp clear vanilla extract
- 3 cups cake flour
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup buttermilk
- Red food coloring (liquid or gel)
- Blue food coloring (liquid or gel)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 12-cup bundt pan well.
- Cream butter and sugar until light and fluffy.
- Beat in eggs, egg whites, and vanilla extract until smooth.
- Sift cake flour, baking powder, and salt together.
- Alternate adding dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients. Mix just until combined.
- Divide batter evenly into three bowls. Leave one plain, add red food coloring to the second, and blue to the third. Mix gently.
- Layer batters in the bundt pan by spooning alternating colors without stirring to keep swirls distinct.
- Bake for 50-70 minutes until a toothpick inserted comes out clean.
- Cool in pan for 15 minutes, then invert onto a wire rack.
- Serve plain or with your favorite frosting or whipped cream.
Notes
This cake can be made ahead of time and freezes well. Consider using sugar substitutes for a healthier alternative.
