Description

A creamy and hearty vegan chowder that combines red lentils, fresh corn, and coconut milk for a nourishing meal.


Ingredients

Scale
  • 1 cup red lentils
  • 2 cups fresh or frozen corn kernels
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Sauté the onion, garlic, and bell pepper until softened.
  2. Add the red lentils, corn, vegetable broth, cumin, paprika, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, until lentils are tender.
  4. Stir in the coconut milk and heat through.
  5. Serve hot, garnished with fresh cilantro if desired.

Notes

For extra creaminess, try blending half of the chowder before adding coconut milk.
