- 1 cup red lentils
- 2 cups fresh or frozen corn kernels
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 can coconut milk
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Sauté the onion, garlic, and bell pepper until softened.
- Add the red lentils, corn, vegetable broth, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 20-25 minutes, until lentils are tender.
- Stir in the coconut milk and heat through.
- Serve hot, garnished with fresh cilantro if desired.
Notes
For extra creaminess, try blending half of the chowder before adding coconut milk.
