Instructions
- Melt dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Beat the heavy cream in a mixing bowl until soft peaks form.
- Whisk together sugar, vanilla extract, and softened cream cheese until well combined.
- Fold the melted chocolate into the cream cheese mixture gently.
- Gradually add the beaten heavy cream into the chocolate mixture, folding carefully until fully incorporated.
- Layer the bottom of serving cups with crushed graham crackers mixed with melted butter.
- Spoon the chocolate mousse over the graham cracker crust in each cup.
- Chill in the refrigerator for at least 120 minutes to allow flavors to meld and mousse to set.
- Top with fresh raspberries before serving.
