Description

Delicate French macarons filled with creamy raspberry cheesecake frosting, offering a perfect balance of sweetness and tangy flavor.


Ingredients

  • 1 cup almond flour
  • 1 3/4 cup powdered sugar
  • 3 egg whites
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon raspberry extract
  • Pink food coloring (optional)
  • 1/2 cup cream cheese
  • 1/4 cup butter
  • 1/2 cup raspberry preserves
  • 1/2 cup powdered sugar (for frosting)


Instructions

  1. Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. Sift together the almond flour and powdered sugar in a bowl.
  3. Beat the egg whites in another bowl until frothy, then add cream of tartar.
  4. Gradually add granulated sugar until stiff peaks form.
  5. Fold the almond flour mixture into the egg whites gently.
  6. Add vanilla and raspberry extracts along with food coloring if desired, and fold until the batter is smooth.
  7. Pipe small circles onto the prepared baking sheets and let them sit for about 30-60 minutes until they form a skin.
  8. Bake for 15-20 minutes, then let cool completely.
  9. Beat cream cheese and butter until creamy for the frosting. Gradually add powdered sugar and raspberry preserves until smooth.
  10. Assemble the macarons by spreading frosting on one shell and topping it with another shell.
