Ingredients

  • 4 slices of white bread
  • 2 cups of milk
  • 1/2 cup of sugar
  • 3 large eggs
  • 1/2 cup of raspberry jam
  • 1 teaspoon of vanilla extract
  • 1/4 cup of breadcrumbs


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Trim the crusts off the bread and cut it into small pieces.
  3. In a saucepan, heat the milk and sugar until dissolved.
  4. In a bowl, whisk the eggs and then add the warm milk mixture.
  5. Stir in the bread pieces and let it soak for about 10 minutes.
  6. Pour the mixture into a greased baking dish and bake for 30 minutes.
  7. Spread the raspberry jam over the top of the pudding.
  8. Whip the egg whites until stiff peaks form and fold in the vanilla extract.
  9. Spread the meringue over the jam layer and sprinkle with breadcrumbs.
  10. Bake for an additional 15 minutes or until the meringue is golden brown.
