- 1 cup pumpkin puree
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup marshmallows (mini or chopped)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar in a large bowl until smooth.
- Beat in the pumpkin puree, egg, and vanilla extract until well combined.
- Whisk together the flour, baking soda, pumpkin pie spice, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chocolate chips and marshmallows.
- Drop heaping tablespoons of dough onto a greased baking sheet.
- Bake for 10-12 minutes, or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For an extra crunch, try adding crushed graham crackers on top before baking.
