Description

Ingredients

  • 6 hard-boiled eggs
  • 3 tbsp mayonnaise
  • 1 tsp mustard
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • Yellow and orange food coloring
  • Chives or parsley for garnish


Instructions

  1. Cut the hard-boiled eggs in half lengthwise and remove the yolks.
  2. Mash the yolks in a bowl and mix with mayonnaise, mustard, salt, and paprika.
  3. Add a few drops of yellow and orange food coloring to the yolk mixture to achieve a pumpkin color.
  4. Spoon or pipe the mixture back into the egg white halves.
  5. Use chives or parsley to create a stem on each egg to resemble pumpkins.
  6. Refrigerate until ready to serve.

Notes

For added creaminess, consider adding an extra tablespoon of mayonnaise. Store in an airtight container in the fridge for up to two days.
