Ingredients

- 1 cup pumpkin puree
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup cheesecake frosting
- Candy melts for coating
- Sprinkles (optional)
Instructions
- Combine in a mixing bowl pumpkin puree, sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix well.
- Mix in another bowl flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add dry ingredients to the pumpkin mixture and mix until just combined.
- Bake the mixture in a greased cake pan at 350°F (175°C) for 25-30 minutes. Allow to cool.
- Crumble the cooled cake in a large bowl, add cheesecake frosting, and mix until well combined.
- Form mixture into small balls and place on a baking sheet. Freeze for about 30 minutes.
- Melt candy melts in a microwave-safe bowl. Dip the ends of cake pop sticks into the melted candy and insert into the cake balls.
- Dip each ball into the melted candy and coat thoroughly. Place on wax paper and let set.
